Chocolate and Valentine’s Day – so synonymous and oh-so-good! It’s an understatement to say I’m a chocoholic, and every year around Valentine’s finds me in the kitchen making these bite-sized melt-in-your-mouth truffles. This time I thought we’d share our favorite truffle recipe with you. These sweets would make a delicious, heartfelt gift for your love, or as you can see from our photos, they can be so much fun to make and enjoy together! (Seems like a great Valentine’s date night in idea to me.) :)
The cast of characters:

16 oz. of semi-sweet chocolate
1 cup heavy whipping cream
2 teaspoons of pure vanilla
cocoa powder and confectioner’s sugar, combined, for coating the truffles
In a small, heavy saucepan, over medium heat, bring the cream to a simmer. Use a spatula to stir and scrape down the sides as the cream heats.
In the meantime, place chocolate in a separate bowl. Pour the heated cream over the chocolate and let it sit for a few minutes.

And while waiting on the chocolate, feel free to use this opportunity to snuggle. ;-)

Stir the now melted chocolate and cream together, then pour in the vanilla. (How do you like my fun spatula? ;-))

Isn’t that beautiful? This is also known as chocolate ganache. Try to avoid eating this by the spoonful or there won’t be any truffles in your future! :) Place this safely away in the refrigerator to chill and harden.

Once the chocolate becomes firm (we left ours in the fridge overnight, and they were a little TOO firm – 4 to 6 hours is probably more ideal), use a teaspoon to form balls of ganache. Roll in your hands quickly (this step is very messy!) and then place in your cocoa and powdered sugar coating. Roll and completely cover your truffle in the coating, then place on a serving tray.

Other coatings for these truffles are finely chopped nuts, such as walnuts, peanuts, or almonds.
We finished off our presentation with loving notes to each other. Am I a lucky girl or what? :)

Next step? Have fun enjoying the chocolatey goodness together! Or, if you plan on having them later, store in the refrigerator. But I’m pretty sure you’re going to have a hard time resisting the urge to have just one .. or two.. or, well, never mind – I’m not saying how many I had! ;-)

This recipe makes 50-60 truffles, depending on the size you make them. It can easily be scaled back if you don’t need quite as many, though we enjoyed sharing these with our family and friends.
